1 cup cooked, shredded chicken
1/2 cup cream cheese, softened
1/4 cup salsa
1/2 teaspoon chili powder
1/4 teaspoon cumin
8 small corn tortillas
Cooking spray (olive oil or avocado oil)
Instructions
Preheat your air fryer to 375°F (190°C).
In a small bowl, mix the shredded chicken, softened cream cheese, salsa, chili powder, and cumin until well combined.
Lightly warm the corn tortillas in the microwave for about 15 seconds to make them pliable.
Spoon about 1 to 1.5 tablespoons of the chicken mixture onto the center of each tortilla.
Tightly roll up each tortilla like a cigar. If needed, secure with a toothpick (remember to remove these before serving).
Lightly spray the rolled taquitos all over with cooking spray. This helps them crisp up.
Place the taquitos in the air fryer basket in a single layer, ensuring they do not touch. You may need to work in batches.
Air fry for 8 to 10 minutes, flipping them halfway through, until they are golden brown and crispy.
Carefully remove the toothpicks if used, and serve immediately with your favorite toppings.
Notes
If your tortillas crack when rolling, warm them longer until very soft.
For extra flavor, mix a pinch of garlic powder into the chicken filling.
Do not overfill the tortillas, or they will unroll during cooking.
If you do not have pre-cooked chicken, cook and shred 1 small chicken breast before mixing the filling.
