- 2 firm, slightly green bananas
- 1 tablespoon coconut oil, melted
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon lemon juice (optional, for color retention)
- Peel the bananas and slice them thinly, about 1/8 inch thick. Use a mandoline for uniform slices if you have one.
- In a medium bowl, toss the banana slices with the melted coconut oil and lemon juice, if using, until lightly coated.
- In a separate small bowl, mix the granulated sugar and cinnamon together.
- Sprinkle the cinnamon sugar mixture over the banana slices and toss gently until the slices are evenly coated.
- Preheat your air fryer to 300°F (150°C).
- Arrange the coated banana slices in a single layer in the air fryer basket. Do not overlap them. You will need to work in batches.
- Air fry for 10 to 15 minutes, shaking the basket gently halfway through the cooking time.
- Check the chips frequently after the 10-minute mark. The chips are done when they are dry and crisp. Watch closely to prevent the sugar from burning.
- Remove the chips from the air fryer and let them cool completely on a wire rack. They will crisp up more as they cool.
Notes
- Use firm bananas; overly ripe bananas will become mushy instead of crisp.
- For extra crispness, you can lightly spray the slices with oil before coating them in the sugar mixture.
- Store cooled chips in an airtight container at room temperature for up to one week.
