Make crispy coconut shrimp quickly in your air fryer. This recipe includes instructions for a simple sweet chili dipping sauce.

  • 1 pound large shrimp, peeled and deveined
  • 1 large egg
  • 1 tablespoon water
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup sweetened shredded coconut
  • 1/2 cup panko breadcrumbs
  • Cooking spray
  • For the Sauce: 1/2 cup sweet chili sauce (store-bought or homemade)

Instructions

  1. Pat the shrimp completely dry with paper towels. This helps the coating stick.
  2. Set up a standard breading station: Place flour, salt, and pepper in one shallow dish. Whisk the egg and water together in a second dish. Mix the shredded coconut and panko breadcrumbs in a third dish.
  3. Dredge each shrimp first in the flour mixture, shaking off excess.
  4. Dip the floured shrimp into the egg wash, letting excess drip off.
  5. Press the shrimp firmly into the coconut-panko mixture until fully coated. Place coated shrimp on a plate.
  6. Preheat your air fryer to 380 degrees Fahrenheit (195 degrees Celsius) for 5 minutes.
  7. Lightly spray the air fryer basket with cooking spray. Arrange the coated shrimp in a single layer in the basket, ensuring they do not touch. Work in batches if necessary.
  8. Spray the tops of the shrimp lightly with cooking spray for extra crispiness.
  9. Air fry for 8 to 10 minutes, flipping the shrimp halfway through the cooking time, until the coating is golden brown and the shrimp are opaque.
  10. Serve the hot coconut shrimp immediately with the sweet chili sauce for dipping.

Notes

  • For the crispiest results, do not overcrowd the air fryer basket during cooking.
  • If you prefer a spicier sauce, add a dash of sriracha to your store-bought sweet chili sauce.
  • You can use unsweetened coconut if you prefer less sugar, but you may need to slightly increase the amount of panko breadcrumbs for texture.
