1 tablespoon olive oil
1 cup cooked potatoes, diced small
1 cup cooked corned beef, shredded or diced
1/2 cup onion, finely chopped
1/4 cup bell pepper, finely chopped (any color)
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
Pinch of salt (taste first, corned beef is salty)
2 large eggs (optional, for serving)
Instructions
If your potatoes are not already cooked, boil or roast them until tender, then dice them into small, uniform pieces.
In a medium bowl, combine the diced potatoes, shredded corned beef, chopped onion, chopped bell pepper, olive oil, garlic powder, black pepper, and salt. Mix gently until everything is coated.
Preheat your air fryer to 380F (195C) for 3 minutes.
Place the hash mixture into the air fryer basket in a single layer, or as close to a single layer as possible. Do not overcrowd the basket; cook in batches if necessary for maximum crispiness.
Air fry for 10 minutes.
Carefully remove the basket and shake well to flip the hash mixture.
Return the basket to the air fryer and cook for another 5 to 8 minutes, or until the potatoes are visibly crispy and the edges of the hash are browned.
Serve immediately. If you want fried eggs, cook them separately in a small pan or air fry them using a small oven-safe dish for about 5 minutes at 350F (175C).
Notes
For the crispiest potatoes, ensure they are dry before mixing them with the other ingredients.
If you are using fresh, uncooked potatoes, you must cook them fully before adding them to the hash mixture for air frying.
You can substitute sweet potatoes for regular potatoes if you prefer.
