Air Fryer Crispy Potato Skins

Make crispy potato skins in your air fryer for a satisfying appetizer without deep frying.

Ingredients

  • 4 medium russet potatoes
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded sharp cheddar cheese
  • 6 slices cooked bacon, crumbled
  • 1/2 cup sour cream
  • 2 tablespoons chopped fresh chives

Instructions

  1. Scrub the potatoes clean and dry them completely. Pierce each potato several times with a fork.
  2. Place the potatoes in the air fryer basket. Cook at 400°F (200°C) for 40 to 50 minutes, or until tender when pierced with a knife.
  3. Remove potatoes and let them cool until you can handle them. Cut each potato in half lengthwise.
  4. Use a spoon to scoop out most of the soft potato flesh, leaving about a 1/4-inch thick shell. Save the scooped potato for another use.
  5. Brush the inside and outside of the potato shells lightly with olive oil. Sprinkle the inside and outside with salt and pepper.
  6. Place the potato skins back into the air fryer basket, skin-side down, in a single layer if possible. Cook at 380°F (195°C) for 6 to 8 minutes until the edges start to crisp.
  7. Flip the skins over. Cook for another 4 to 6 minutes until the skins are golden brown and very crispy.
  8. Remove the skins. Fill each skin evenly with shredded cheese and crumbled bacon.
  9. Return the filled skins to the air fryer. Cook at 375°F (190°C) for 3 to 4 minutes, just until the cheese melts.
  10. Top the melted cheese with a dollop of sour cream and sprinkle with fresh chives before serving.

Notes

  • For extra crispiness, lightly brush the inside of the scooped skins with a small amount of extra oil before the final crisping step.
  • Do not overcrowd the air fryer basket; cook in batches if necessary to allow air circulation.
  • Ensure the potatoes are completely dry before oiling and seasoning.
