4 ears of corn, husked
1 tablespoon olive oil
1/4 cup mayonnaise
2 tablespoons cotija cheese, crumbled
1 tablespoon fresh lime juice
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1/4 teaspoon garlic powder
Salt and freshly ground black pepper to taste
Optional garnishes: fresh cilantro, extra lime wedges
Instructions
Preheat your air fryer to 375°F (190°C).
Lightly brush the corn ears with olive oil.
Place the corn in the air fryer basket in a single layer.
Air fry for 10-12 minutes, turning halfway through, until the corn is tender and lightly charred.
While the corn is cooking, whisk together the mayonnaise, cotija cheese, lime juice, chili powder, smoked paprika, and garlic powder in a small bowl.
Once the corn is cooked, carefully remove it from the air fryer.
Brush the corn generously with the prepared mayonnaise mixture.
Season with salt and pepper to taste.
Garnish with fresh cilantro and serve with extra lime wedges, if desired.

Ensure your corn is dry before brushing with oil for best results.
Adjust chili powder to your spice preference.
If you don’t have cotija cheese, feta cheese can be a substitute.
