Make crispy, melty mozzarella sticks in your air fryer. This recipe fixes common air fryer failures to give you perfect party food without the deep-fry guilt.

Ingredients

Scale
  • 1 (8 ounce) package string cheese sticks, thawed
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • Cooking spray (olive oil or avocado oil recommended)

Instructions

  1. Place the thawed cheese sticks on a plate and pat them very dry with paper towels. This step is key for crispiness.
  2. Set up a standard breading station: one shallow dish with flour, one shallow dish with beaten eggs, and one shallow dish with panko, Parmesan, garlic powder, and salt mixed well.
  3. Working with one stick at a time, dredge the cheese fully in the flour, shaking off any excess.
  4. Dip the floured stick completely into the egg wash, letting excess drip off.
  5. Press the stick firmly into the panko mixture, ensuring it is completely coated on all sides.
  6. Place the breaded sticks on a baking sheet lined with parchment paper. Freeze the sticks for at least 30 minutes, or until solid. This prevents them from leaking during cooking.
  7. Preheat your air fryer to 380°F (195°C).
  8. Lightly spray the frozen mozzarella sticks on all sides with cooking spray. Do not overcrowd the air fryer basket; work in batches if necessary.
  9. Air fry for 6 to 8 minutes, flipping halfway through, until golden brown and cheese is melted.
  10. Serve immediately with your favorite marinara sauce.

Notes

  • Freezing the sticks before air frying prevents the cheese from melting out too early.
  • Do not skip patting the cheese dry; moisture creates steam and ruins the crunch.
  • Check your spray oil’s smoke point; avocado or light olive oil works well for high heat.
