1 (14.75 ounce) can pink salmon, drained and flaked
1 large egg, lightly beaten
1/2 cup panko breadcrumbs, plus 1/4 cup for coating
2 tablespoons mayonnaise
1 tablespoon Dijon mustard
1 tablespoon fresh lemon juice
1/4 cup finely chopped fresh parsley
1/4 teaspoon black pepper
1/4 teaspoon salt
Cooking spray (non-stick recommended)
Instructions
In a medium bowl, combine the drained salmon, beaten egg, 1/2 cup panko breadcrumbs, mayonnaise, Dijon mustard, lemon juice, parsley, pepper, and salt. Mix gently until just combined; avoid overmixing.
Form the mixture into 6 equal-sized patties, about 1 inch thick.
Place the remaining 1/4 cup of panko breadcrumbs on a shallow plate. Lightly press each salmon patty into the breadcrumbs to coat both sides.
Preheat your air fryer to 380 degrees Fahrenheit (195 degrees Celsius) for 3 minutes.
Lightly spray the air fryer basket with cooking spray. Place the salmon patties in a single layer in the basket, ensuring they do not touch. Work in batches if necessary.
Lightly spray the tops of the patties with cooking spray.
Air fry for 10 to 12 minutes, flipping the patties halfway through the cooking time. The patties are done when they are golden brown and heated through.
Serve immediately with your preferred dipping sauce.
Notes
To prevent sticking, spray the air fryer basket well before adding the patties, and spray the tops of the patties before cooking.
If you use fresh or leftover cooked salmon, ensure it is fully flaked and chilled before mixing.
For a lower-carb option, substitute almond flour for the panko breadcrumbs.
