Make tender stuffed bell peppers quickly in your air fryer. This recipe uses ground beef and rice for a satisfying, easy weeknight meal.

  • 4 medium bell peppers (any color)
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup cooked white rice
  • 1 (14.5 ounce) can diced tomatoes, drained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Cut the bell peppers in half lengthwise and remove the seeds and white membranes. Lightly brush the inside of the peppers with olive oil.
  2. In a skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned. Drain any excess fat.
  3. Stir the cooked rice, drained diced tomatoes, oregano, salt, and pepper into the beef mixture. Mix well.
  4. Spoon the filling evenly into the bell pepper halves. Do not overfill.
  5. Place the stuffed peppers in the air fryer basket in a single layer. You may need to cook in batches.
  6. Air fry at 375 degrees Fahrenheit for 12 to 15 minutes, or until the peppers are tender-crisp.
  7. Remove the basket, sprinkle the tops with mozzarella cheese, and return to the air fryer for 2 to 3 more minutes, until the cheese is melted and bubbly.
  8. Carefully remove the peppers from the air fryer and serve immediately.

Notes

  • For low-carb peppers, substitute the rice with cauliflower rice or extra ground meat mixture.
  • If your peppers do not fit easily, you can cut them into quarters instead of halves.
  • Check tenderness after 12 minutes; adjust time if you prefer softer peppers.
