  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup apple cider
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • For the Cinnamon Sugar Coating:
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • For the Cider Glaze:
  • 1 cup powdered sugar
  • 2-3 tablespoons apple cider

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a mini muffin tin.
  2. In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
  3. In a separate bowl, whisk together apple cider, melted butter, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Spoon the batter into the prepared mini muffin tin, filling each cup about two-thirds full.
  6. Bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean.
  7. While the donut holes are baking, prepare the cinnamon sugar coating by mixing sugar and cinnamon in a shallow dish.
  8. Prepare the cider glaze by whisking powdered sugar and apple cider until smooth. Add more cider if needed for desired consistency.
  9. Once the donut holes are out of the oven, let them cool in the tin for a few minutes before transferring them to a wire rack.
  10. While still warm, gently roll the donut holes in the cinnamon sugar mixture.
  11. Drizzle with the cider glaze.

Notes

  • You can also bake these in a donut hole pan for a more traditional shape.
  • For a richer flavor, use buttermilk instead of regular apple cider in the batter.
  • These are best enjoyed fresh, but can be stored in an airtight container at room temperature for up to 2 days.
