2 cups all-purpose flour
1 cup granulated sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon salt
1 cup apple cider
1/2 cup unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract
1/2 cup apple cider doughnut sugar (recipe below)
Instructions
Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, nutmeg, cloves, and salt.
In a separate medium bowl, whisk together the apple cider, melted butter, eggs, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and stir just until combined. Be careful not to overmix.
Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
While the muffins are cooling, prepare the apple cider doughnut sugar. In a small bowl, combine 1/2 cup granulated sugar with 1 teaspoon ground cinnamon.
Once the muffins are completely cool, gently roll or brush the tops with melted butter (optional) and then dip them into the apple cider doughnut sugar mixture, coating them evenly.
Notes
For an extra moist muffin, you can add 1/4 cup of unsweetened applesauce to the wet ingredients.
If you don’t have apple cider, you can use apple juice, but the flavor will be less intense.
The melted butter step before coating in sugar is optional but adds to the doughnut-like texture.
Store cooled muffins in an airtight container at room temperature for up to 3 days.
