Create a stunning Apple Cider Glazed Pork Tenderloin perfect for cozy autumn or winter dinners. This recipe delivers juicy pork wrapped in a rich, sweet, and tangy glaze that tastes special but remains simple enough for any weeknight. We fixed the common pitfalls to give you a foolproof, flavorful result.

Ingredients

Scale
  • 1 (about 1.5 lb) pork tenderloin
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 1 cup apple cider
  • 1/4 cup apple cider vinegar
  • 1/4 cup maple syrup
  • 2 tablespoons Dijon mustard
  • 1 teaspoon dried thyme
  • 1 clove garlic, minced

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. Rub the pork tenderloin all over with olive oil, salt, and pepper.
  3. Sear the pork in an oven-safe skillet over medium-high heat for 2-3 minutes per side until browned.
  4. Transfer the skillet to the preheated oven. Roast for 15-20 minutes, or until an internal temperature of 145 degrees F is reached. Remove pork and let it rest, tented with foil.
  5. While the pork cooks, make the glaze: Combine apple cider, apple cider vinegar, maple syrup, Dijon mustard, thyme, and minced garlic in a small saucepan.
  6. Bring the mixture to a boil over medium-high heat. Reduce heat and simmer, stirring occasionally, for 10-15 minutes until the glaze reduces by half and thickens enough to coat the back of a spoon.
  7. Slice the rested pork tenderloin. Drizzle generously with the warm apple cider glaze before serving.

Notes

  • Use a meat thermometer to check for doneness; pulling the pork at 145 degrees F keeps it juicy.
  • For an extra crisp exterior, you can briefly broil the pork for the last minute of cooking after applying the glaze.
  • If you do not have an oven-safe skillet, sear the pork in a regular skillet and then transfer it to a baking dish.
