1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1 cup plain Greek yogurt
1 teaspoon vanilla extract
1 cup finely diced apple (about 1 medium apple)
1/4 cup chopped walnuts or pecans (optional)
2 tablespoons brown sugar for topping (optional)
Instructions
Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease thoroughly.
In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Set aside.
In a large bowl, cream the softened butter and granulated sugar together until light and fluffy.
Beat in the eggs one at a time, mixing well after each addition. Stir in the Greek yogurt and vanilla extract until just combined.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just incorporated. Do not overmix the batter.
Gently fold in the diced apple and nuts, if using.
Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
If desired, sprinkle the tops with brown sugar.
Bake for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For a lower fat option, substitute the butter with 1/2 cup of unsweetened applesauce.
You can use Greek yogurt instead of applesauce for a slightly different texture.
For a cinnamon swirl effect, mix 1/4 cup brown sugar with 1 teaspoon cinnamon and layer a spoonful of this mixture between half the batter and the remaining half in the cups.
