  • For the Crust:
  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • For the Cheesecake Layer:
  • 2 (8-ounce) packages cream cheese, softened
  • ⅔ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • For the Apple Pie Topping:
  • 3 cups peeled and diced apples (about 2-3 medium apples)
  • ¼ cup granulated sugar
  • 1 tablespoon all-purpose flour
  • ½ teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. Make the crust: In a medium bowl, combine graham cracker crumbs and ¼ cup granulated sugar. Pour in the melted butter and stir until well combined. Press the mixture evenly into the bottom of the prepared pan.
  3. Bake the crust for 8-10 minutes, until lightly golden. Remove from oven and let it cool slightly.
  4. Make the cheesecake layer: In a large bowl, beat the softened cream cheese and ⅔ cup granulated sugar with an electric mixer until smooth and creamy.
  5. Beat in the eggs one at a time, then stir in the vanilla extract until just combined. Do not overmix.
  6. Pour the cheesecake mixture over the baked crust and spread evenly.
  7. Make the apple pie topping: In a separate bowl, toss the diced apples with ¼ cup granulated sugar, flour, cinnamon, nutmeg, and lemon juice.
  8. Spoon the apple mixture evenly over the cheesecake layer.
  9. Bake for 35-45 minutes, or until the edges are set and the center is mostly set (it will firm up as it cools).
  10. Let the bars cool completely in the pan on a wire rack.
  11. Once cooled, use the parchment paper overhang to lift the bars out of the pan. Cut into bars.
  12. Chill for at least 2 hours before serving for the best texture.
