Simple Applesauce Muffins

Make moist, naturally sweet muffins using applesauce. This recipe is easy and works well for meal prep.

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 cup granulated sugar
  • 1/2 cup unsweetened applesauce
  • 1/4 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
  3. In a separate medium bowl, whisk the egg, sugar, applesauce, milk, oil, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix.
  5. Divide the batter evenly among the 12 muffin cups.
  6. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For gluten-free muffins, substitute the all-purpose flour with a 1-to-1 gluten-free baking blend.
  • You can reduce the sugar by one-quarter cup if you prefer less sweetness.
  • Add 1/2 cup of mini chocolate chips or chopped walnuts to the batter before dividing.
