3 lbs waxy potatoes (like Yukon Gold or red potatoes)
6 slices bacon, cut into small pieces
1 medium yellow onion, finely chopped
1 cup low-sodium chicken or vegetable broth
1/2 cup white wine vinegar
2 tablespoons sugar
1 tablespoon Dijon mustard
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup fresh parsley, chopped
Instructions
Wash the potatoes. Place them in a large pot, cover with cold, salted water, and bring to a boil. Cook until tender when pierced with a fork, about 20-25 minutes.
While potatoes cook, cook the bacon in a large skillet over medium heat until crisp. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the skillet.
Add the chopped onion to the bacon fat in the skillet. Cook over medium heat until softened, about 5 minutes. Do not brown the onions.
Pour the broth, vinegar, sugar, mustard, salt, and pepper into the skillet with the onions. Bring the mixture to a simmer, stirring until the sugar dissolves. Reduce heat to low and keep warm.
Drain the cooked potatoes and let them cool slightly until you can handle them. Peel the potatoes while still warm and slice them about 1/4 inch thick into a large bowl.
Pour the warm dressing evenly over the warm potatoes. Gently toss to coat all the slices. The warm potatoes absorb the dressing better.
Let the salad sit for at least 30 minutes at room temperature for the flavors to meld.
Just before serving, gently fold in the cooked bacon pieces and the fresh parsley. Serve warm or at room temperature.
Notes
Use waxy potatoes; starchy potatoes like Russets will fall apart when tossed.
For a tangier flavor, you can substitute apple cider vinegar for white wine vinegar.
You can prepare the dressing and cook the bacon ahead of time; reheat the dressing gently before pouring over the potatoes.
