Ingredients
Scale
2 cups cooked, shredded chicken breast
2 ripe avocados, mashed
1/4 cup red onion, finely chopped
1/4 cup celery, finely chopped
2 tablespoons fresh lime juice
1 tablespoon Dijon mustard
1/4 cup plain Greek yogurt (optional, for extra tang and protein)
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons fresh cilantro, chopped
Instructions
Place the shredded chicken in a medium mixing bowl.
In a separate small bowl, mash the ripe avocados until mostly smooth. You can leave a few small lumps for texture.
Add the mashed avocado, chopped red onion, chopped celery, lime juice, and Dijon mustard to the chicken.
If using, stir in the Greek yogurt.
Mix all ingredients together until the chicken is evenly coated and the salad is creamy.
Season with salt and pepper. Taste and adjust seasoning as needed.
Stir in the fresh cilantro.
Serve immediately over lettuce wraps, on low-carb toast, or store for meal prep.
Notes
For the best creamy texture, make sure your avocados are fully ripe.
If you are preparing this ahead of time, add the lime juice generously to help prevent the avocado from browning.
This salad is excellent served in avocado halves for a keto chicken salad presentation.
For added crunch, add 1/4 cup of chopped pecans or sunflower seeds.
