1 pound pasta
2 cups fresh basil leaves
2 ripe avocados, pitted and peeled
2 cloves garlic
1/4 cup olive oil
2 tablespoons lemon juice
1/4 cup grated Parmesan cheese (optional)
Salt and pepper to taste
Instructions
Cook pasta according to package directions. Reserve about 1 cup of pasta water before draining.
While pasta is cooking, combine basil, avocados, garlic, olive oil, and lemon juice in a blender.
Blend until smooth and creamy. If the sauce is too thick, add a little reserved pasta water until you reach your desired consistency.
Stir in Parmesan cheese if using. Season with salt and pepper.
Toss the drained pasta with the avocado pesto sauce. Add more pasta water if needed to coat the pasta evenly.
Serve immediately.
Notes
For a vegan option, omit the Parmesan cheese.
You can add a pinch of red pepper flakes for a little heat.
To prevent avocados from browning, add lemon juice directly to the blender.
