12 large eggs
1/2 cup mayonnaise
2 tablespoons Dijon mustard
1/4 teaspoon salt
1/4 teaspoon black pepper
4-6 slices bacon, cooked and crumbled
1/2 cup shredded cheddar cheese
2 tablespoons chopped fresh chives (for garnish)
Instructions
Place eggs in a single layer in a saucepan. Cover with cold water by 1 inch.
Bring to a boil over high heat. Once boiling, remove from heat, cover, and let stand for 10-12 minutes.
Drain hot water and immediately fill the pan with ice water. Let eggs cool for at least 15 minutes.
Peel the cooled eggs and slice them in half lengthwise.
Scoop the yolks into a medium bowl.
Add mayonnaise, Dijon mustard, salt, and pepper to the bowl with the yolks. Mash with a fork until smooth.
Stir in the crumbled bacon and shredded cheddar cheese.
Spoon or pipe the yolk mixture back into the egg white halves.
Garnish with fresh chives.
Arrange on a serving platter and serve.
Notes
For perfectly cooked hard-boiled eggs, do not overcook.
Adjust the amount of mayonnaise to achieve your desired consistency.
You can add a pinch of paprika for extra color and flavor.
