  • 2 pounds ground beef (80/20 recommended)
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1/4 cup finely chopped onion
  • 2 large eggs
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 pound bacon
  • 1/4 cup ketchup (for glaze)
  • 1 tablespoon brown sugar (for glaze)
  • 1 teaspoon mustard (for glaze)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine ground beef, breadcrumbs, milk, chopped onion, eggs, 2 tablespoons ketchup, Worcestershire sauce, salt, pepper, and garlic powder. Mix gently until just combined. Do not overmix.
  3. Shape the mixture into a loaf and place it on a baking sheet or in a loaf pan.
  4. Arrange the bacon strips over the top and sides of the meatloaf, overlapping them slightly.
  5. In a small bowl, mix the 1/4 cup ketchup, brown sugar, and mustard for the glaze. Brush this glaze over the bacon.
  6. Bake for 1 hour, or until the meatloaf is cooked through and the bacon is crispy.
  7. Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

  • For a sweeter glaze, add more brown sugar.
  • If you prefer less smoky flavor, use lower-sodium bacon.
