Indulge in this creamy, homemade ice cream infused with the classic flavors of Baileys Irish Cream and rich coffee. It’s the perfect adult treat for special occasions or a delightful dessert any time.

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1/4 cup Baileys Irish Cream
  • 2 tablespoons instant coffee granules
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a medium saucepan, whisk together the heavy cream, whole milk, granulated sugar, instant coffee granules, and salt.
  2. Heat the mixture over medium heat, stirring constantly, until the sugar is dissolved and the mixture is warm but not boiling.
  3. Remove from heat and stir in the Baileys Irish Cream and vanilla extract.
  4. Pour the mixture into a bowl, cover, and chill in the refrigerator for at least 2 hours, or until thoroughly cold.
  5. Pour the chilled mixture into your ice cream maker and churn according to the manufacturer’s instructions.
  6. Transfer the churned ice cream to an airtight container and freeze for at least 4 hours, or until firm.

Notes

  • For a stronger coffee flavor, add an extra teaspoon of instant coffee granules.
  • If you don’t have an ice cream maker, you can freeze the mixture in a shallow container, stirring vigorously every 30 minutes for the first 2-3 hours to break up ice crystals.
  • This ice cream is best served within two weeks.
