Bake these chicken taquitos until they are perfectly crispy. This recipe offers a lighter alternative to traditional fried versions, ideal for quick snacks or party appetizers. You will achieve great crunch without the oil.

Ingredients

Scale
  • 1 pound cooked, shredded chicken breast
  • 8 ounces cream cheese, softened
  • 1/2 cup salsa
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 12 small corn tortillas
  • Cooking spray

Instructions

  1. Preheat your oven to 400 degrees F. Lightly grease a baking sheet or line it with parchment paper.
  2. In a medium bowl, mix the shredded chicken, softened cream cheese, salsa, chili powder, cumin, and garlic powder until fully combined.
  3. Warm the corn tortillas briefly in the microwave (about 20-30 seconds) to make them pliable. This prevents tearing.
  4. Spoon about 2 tablespoons of the chicken mixture into the center of each warm tortilla.
  5. Roll the tortillas tightly into taquitos. Place them seam-side down on the prepared baking sheet.
  6. Lightly spray the tops of the taquitos generously with cooking spray. This helps them crisp up.
  7. Bake for 15 to 20 minutes, flipping halfway through, until the taquitos are golden brown and crunchy.
  8. Serve immediately with your favorite toppings like sour cream, guacamole, or extra salsa.

Notes

  • If your tortillas crack when rolling, warm them longer.
  • For extra crispiness, you can broil them for the last minute, watching closely to prevent burning.
  • Use rotisserie chicken for a time saver.
  • Adjust salsa heat level to your preference.
