1 large eggplant, sliced into 1/2-inch thick rounds
1 jar (24 ounces) marinara sauce
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 tablespoons chopped fresh basil
1 tablespoon olive oil
Salt and freshly ground black pepper to taste
Instructions
Preheat your oven to 375°F (190°C).
Arrange eggplant slices on a baking sheet. Brush lightly with olive oil and season with salt and pepper.
Bake for 15-20 minutes, or until the eggplant is tender and lightly browned.
Remove eggplant from the oven.
Spoon a layer of marinara sauce onto each eggplant slice.
Top with mozzarella cheese and a sprinkle of Parmesan cheese.
