A simple recipe for creamy baked feta pasta using cherry tomatoes, garlic, and herbs.

  • 1 (7-8 ounce) block feta cheese
  • 2 pints cherry or grape tomatoes
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 12 ounces pasta (e.g., penne, rotini)
  • Fresh basil, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the block of feta cheese in the center of a 9×13 inch baking dish.
  3. Arrange the cherry tomatoes around the feta block.
  4. Drizzle the olive oil over the tomatoes and feta.
  5. Sprinkle the minced garlic, oregano, and red pepper flakes (if using) over the tomatoes. Season lightly with salt and pepper.
  6. Bake for 30 to 35 minutes, or until the tomatoes have burst and the feta is soft and slightly browned.
  7. While the dish bakes, cook the pasta according to package directions until al dente. Reserve about 1 cup of the pasta cooking water before draining.
  8. Remove the baking dish from the oven. Mash the hot feta and tomatoes together with a fork until a creamy sauce forms. Stir well to combine the oil and juices.
  9. Add the drained pasta to the baking dish and toss everything together until the pasta is fully coated in the sauce. Add a splash of the reserved pasta water if the sauce seems too thick.
  10. Serve immediately, garnished with fresh basil.

Notes

  • For a richer flavor, use garlic butter instead of plain olive oil over the tomatoes.
  • You can add a few sprigs of fresh thyme or rosemary to the baking dish for extra aroma.
  • If you prefer a smoother sauce, you can briefly blend the baked tomato and feta mixture before adding the pasta.
