  • 3 medium zucchini
  • 1 large egg
  • 2 tablespoons milk
  • 1 cup Panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Line a baking sheet with parchment paper.
  2. Wash and trim the ends of the zucchini. Cut each zucchini lengthwise into sticks about 1/4 inch thick.
  3. Set up a dredging station with three shallow bowls. In the first bowl, place the flour, salt, and pepper. In the second bowl, whisk the egg and milk together. In the third bowl, combine the Panko breadcrumbs and Parmesan cheese.
  4. Pat the zucchini sticks dry with paper towels. This step helps the coating stick and promotes crispiness.
  5. Dredge each zucchini stick first in the flour mixture, shaking off any excess.
  6. Dip the floured stick into the egg mixture, allowing excess to drip off.
  7. Finally, press the stick firmly into the Panko-Parmesan mixture until fully coated.
  8. Place the coated zucchini sticks in a single layer on the prepared baking sheet. Do not overcrowd the pan.
  9. Bake for 12 to 15 minutes, flipping the fries halfway through, until they are golden brown and crisp.
  10. Serve immediately with your preferred dipping sauce.

  • For extra crispiness, you can lightly spray the coated fries with cooking spray before baking.
  • If you want a lower-carb option, substitute almond flour for the all-purpose flour.
