Make moist, flavorful cinnamon buns using a simple, no-knead batter inspired by classic banana bread.

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup granulated sugar
  • 1/4 cup melted unsalted butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas (about 2 medium)
  • 1/4 cup milk
  • 1/2 cup packed brown sugar (for filling)
  • 2 tablespoons softened butter (for filling)
  • 1 tablespoon ground cinnamon (for filling)
  • 1/2 cup powdered sugar (for glaze)
  • 1 tablespoon milk or cream (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. Whisk together flour, baking soda, salt, cinnamon, and nutmeg in a large bowl.
  2. In a separate bowl, mix granulated sugar, melted butter, egg, vanilla, mashed bananas, and milk until just combined.
  3. Pour the wet ingredients into the dry ingredients. Stir gently until a thick, sticky batter forms. Do not overmix.
  4. Lightly grease an 8×8 inch baking pan.
  5. Spread half of the batter evenly into the prepared pan.
  6. In a small bowl, mix the brown sugar, 2 tablespoons softened butter, and 1 tablespoon cinnamon for the filling until crumbly.
  7. Sprinkle the filling mixture evenly over the batter layer in the pan.
  8. Gently spoon the remaining batter over the filling layer. Use a spatula to smooth the top slightly; do not press down hard.
  9. Bake at 350 degrees Fahrenheit for 30 to 35 minutes, or until a toothpick inserted near the center comes out clean.
  10. Let the buns cool in the pan for 10 minutes.
  11. While cooling, whisk together powdered sugar, 1 tablespoon milk, and 1/2 teaspoon vanilla for the glaze.
  12. Drizzle the glaze over the warm buns before serving.

Notes

  • Use very ripe, spotty bananas for the best flavor and moisture.
  • If the batter seems too sticky to spread, lightly oil your spatula.
  • For a stronger cinnamon flavor, add 1/4 teaspoon of cinnamon to the main batter mixture.
