4 large eggs
1 teaspoon vanilla extract
1 cup mashed very ripe bananas (about 3 medium)
1 cup all-purpose flour
3/4 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup chopped walnuts, plus 2 tablespoons for topping
Instructions
Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal. Lightly grease the paper.
In a large bowl, whisk the melted butter and sugar together until fully combined.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Mix in the mashed bananas until just incorporated. Do not overmix.
In a separate medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed or by hand until just combined. Fold in the 1 cup of chopped walnuts.
Spread the batter evenly into the prepared baking pan. Sprinkle the remaining 2 tablespoons of walnuts over the top.
Bake for 30 to 35 minutes. A toothpick inserted near the center should come out with moist crumbs attached, not wet batter.
Let the brownies cool completely in the pan on a wire rack before lifting them out using the parchment overhang. Cut into squares for snacking.

Use bananas that are heavily spotted or almost black for the best banana flavor and moisture.
For an extra fudgy texture, slightly underbake by 2-3 minutes.
If you prefer chocolate chips over walnuts, substitute 1 cup of semi-sweet chocolate chips for the walnuts.
