Ingredients

Scale
  • 2 lbs Russet potatoes, cut into fries
  • Vegetable oil, for frying
  • 1 lb boneless, skinless chicken breast or thighs
  • 1 cup BBQ sauce
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup ranch dressing (optional)
  • 2 tablespoons chopped green onions, for garnish
  • Salt and black pepper to taste

Instructions

  1. Prepare the fries: Soak the cut potatoes in cold water for at least 30 minutes. Drain well and pat them completely dry with paper towels.
  2. Heat vegetable oil in a deep fryer or heavy pot to 325°F (160°C). Fry the potatoes once until pale gold, about 5-7 minutes. Remove and drain.
  3. Increase oil temperature to 375°F (190°C). Fry the potatoes a second time until golden brown and crispy, about 2-4 minutes. Season immediately with salt. Keep warm.
  4. Cook the chicken: While the fries are frying, dice the chicken into bite-sized pieces. Season with salt and pepper. Cook in a skillet over medium-high heat until cooked through.
  5. Toss the cooked chicken thoroughly in the BBQ sauce until coated.
  6. Assemble the loaded fries: Spread the hot, crispy fries on a large oven-safe platter or baking sheet.
  7. Top the fries evenly with the sauced BBQ chicken.
  8. Sprinkle the cheddar and Monterey Jack cheeses over the chicken and fries.
  9. Bake or broil for 3-5 minutes, or until the cheese is completely melted and bubbly. Watch carefully to prevent burning.
  10. Remove from the oven. Drizzle with ranch dressing, if using, and garnish with fresh green onions. Serve immediately.

Notes

  • Drying the potatoes completely before the first fry is critical for crispness.
  • For extra smoky flavor, use a dark, smoky BBQ sauce.
  • You can bake the fries instead of frying them; toss them in oil and bake at 425°F (220°C) until crisp, flipping halfway through.
