4 medium sweet potatoes
1.5 lbs boneless, skinless chicken breasts
1 cup your favorite BBQ sauce
1/2 cup chicken broth
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
Salt and black pepper to taste
Optional toppings: chopped green onions, plain Greek yogurt or sour cream
Instructions
Preheat your oven to 400 degrees F (200 degrees C).
Prick the sweet potatoes several times with a fork. Rub lightly with oil and a pinch of salt.
Bake the sweet potatoes directly on the oven rack for 45 to 60 minutes, or until tender when pierced with a knife.
While potatoes bake, place chicken breasts, BBQ sauce, chicken broth, smoked paprika, garlic powder, salt, and pepper in a slow cooker or Dutch oven.
Cook on low for 4 to 6 hours, or until the chicken is easily shredded.
Remove the chicken and shred it using two forks. Return the shredded chicken to the sauce and mix well.
Once the sweet potatoes are done, slice them lengthwise down the center. Gently fluff the inside flesh with a fork.
Spoon generous amounts of the BBQ pulled chicken mixture into each sweet potato.
Add your desired toppings and serve immediately.

For a quicker cook time, shred the chicken using an electric mixer on low speed after it cooks.
If you do not have a slow cooker, simmer the chicken mixture on the stovetop over low heat until cooked through, about 30 minutes.
