  • 2 (20 ounce) cans young green jackfruit in brine, drained and rinsed
  • 1 tablespoon olive oil
  • 1 cup your favorite BBQ sauce
  • 1/4 cup water
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and black pepper to taste
  • 4 sandwich buns
  • Optional toppings: coleslaw, pickles, red onion

Instructions

  1. Drain and rinse the jackfruit thoroughly. Remove any tough core pieces and shred the jackfruit with two forks or your fingers.
  2. Heat olive oil in a large skillet over medium heat. Add the shredded jackfruit and cook for 5-7 minutes, stirring occasionally, until lightly browned.
  3. In a small bowl, whisk together the BBQ sauce, water, apple cider vinegar, smoked paprika, garlic powder, and onion powder.
  4. Pour the BBQ sauce mixture over the jackfruit in the skillet. Stir to coat evenly.
  5. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes, or until the jackfruit is tender and has absorbed most of the sauce. Stir occasionally.
  6. Season with salt and black pepper to taste.
  7. Warm the sandwich buns.
  8. Spoon the BBQ pulled jackfruit generously onto the bottom halves of the buns.
  9. Add your favorite toppings, such as coleslaw, pickles, or red onion.
  10. Top with the other halves of the buns and serve immediately.

Notes

  • Ensure you use young green jackfruit in brine, not ripe jackfruit in syrup.
  • Adjust the amount of BBQ sauce and seasonings to your preference.
  • For a spicier sandwich, add a pinch of cayenne pepper or a dash of hot sauce to the BBQ sauce mixture.
