1/4 cup soy sauce
2 tablespoons oyster sauce
1 tablespoon brown sugar
1 teaspoon sesame oil
1 teaspoon cornstarch (for sauce thickening)
2 tablespoons cold water (for cornstarch slurry)
Instructions
Prepare the beef: In a bowl, combine the sliced beef with 1 tablespoon soy sauce, 1 teaspoon cornstarch, and 1 teaspoon vegetable oil. Mix well and let it sit for 10 minutes. This is the velveting step for tender beef.
Blanch the broccoli: Bring a small pot of water to a boil. Add the broccoli florets and cook for 1 to 2 minutes until bright green. Immediately drain and plunge the broccoli into ice water to stop the cooking process. Drain well.
Mix the sauce: In a small bowl, whisk together the beef broth, 1/4 cup soy sauce, oyster sauce, brown sugar, and sesame oil. Set aside.
Cook the beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef in a single layer (cook in batches if necessary) and stir fry for 2 to 3 minutes until browned. Remove the beef from the skillet and set aside.
Combine: Return the cooked beef to the skillet. Add the blanched broccoli. Pour the prepared sauce mixture over the beef and broccoli.
Thicken the sauce: In a small cup, mix 1 teaspoon of cornstarch with 2 tablespoons of cold water to create a slurry. Pour the slurry into the skillet while stirring constantly. Cook for 1 minute until the sauce thickens and coats the beef and broccoli.

For the best texture, slice the beef when it is partially frozen; this makes thin slicing easier.
