This creamy, savory Reuben Dip captures all the classic deli flavors of the sandwich. Made easily in the slow cooker, it is the perfect hot appetizer for game days or parties.

Ingredients

  • 1 cup chopped cooked corned beef
  • 1 cup shredded Swiss cheese
  • 1/2 cup sauerkraut, well-drained and squeezed dry
  • 1/2 cup mayonnaise
  • 1/4 cup Thousand Island dressing
  • 4 ounces cream cheese, softened
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon caraway seeds (optional)
  • Rye bread slices or crackers, for serving

Instructions

  1. Combine the chopped corned beef, Swiss cheese, sauerkraut, mayonnaise, Thousand Island dressing, softened cream cheese, Dijon mustard, and caraway seeds (if using) in the bowl of a small slow cooker.
  2. Stir all ingredients together until they are fully combined and the mixture is uniform.
  3. Cover the slow cooker and cook on LOW for 1 to 2 hours, or on HIGH for about 1 hour, stirring halfway through.
  4. Stir well before serving to ensure the dip is smooth and hot.
  5. Serve the warm, cheesy dip immediately with toasted rye bread slices or your favorite crackers.

Notes

  • Squeeze the sauerkraut very dry after rinsing; excess moisture will make your dip watery.
  • For a baked version, combine ingredients in an oven-safe dish and bake at 375°F for 20 minutes until bubbly.
  • If you want a richer flavor, substitute half the mayonnaise with sour cream.
