Make savory, restaurant-style pan fried noodles quickly using a simple soy sauce base. This recipe is perfect for a fast weeknight dinner.

  • 8 oz dried egg noodles or ramen noodles
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 cup shredded cabbage
  • 1 cup sliced carrots
  • 1/2 cup sliced green onions, white and green parts separated
  • 3 tablespoons soy sauce
  • 1 tablespoon dark soy sauce (for color)
  • 1 teaspoon sesame oil
  • 1/2 teaspoon white sugar
  • Pinch of ground white pepper

Instructions

  1. Cook the noodles according to package directions until just tender. Drain immediately and rinse with cold water to stop cooking. Toss lightly with 1 teaspoon of vegetable oil to prevent sticking. Set aside.
  2. Heat the remaining vegetable oil in a large wok or skillet over medium-high heat.
  3. Add the minced garlic and cook for 15 seconds until fragrant.
  4. Add the cabbage and carrots. Stir fry for 2 minutes until vegetables begin to soften.
  5. Add the white parts of the green onions and stir fry for 30 seconds more.
  6. Add the cooked noodles to the wok. Pour in the soy sauce, dark soy sauce, sesame oil, sugar, and white pepper.
  7. Toss everything together quickly and continuously for 2 to 3 minutes, ensuring the noodles are evenly coated and heated through.
  8. Stir in the green parts of the green onions just before serving.

Notes

  • For a richer flavor, use chicken broth instead of water when boiling your noodles.
  • If you do not have dark soy sauce, use an extra tablespoon of regular soy sauce, but the color will be lighter.
  • You can add cooked protein like shredded chicken or shrimp during step 4.
