2 lbs carrots, peeled and cut into 1-inch pieces
3 tablespoons unsalted butter, melted
2 tablespoons honey
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper for easy cleanup.
Place the cut carrots in a large bowl.
In a small bowl, whisk together the melted butter, honey, minced garlic, salt, and pepper until combined.
Pour the butter mixture over the carrots and toss well until every piece is evenly coated.
Spread the carrots in a single layer on the prepared baking sheet. Do not overlap them.
Roast for 20 to 25 minutes, stirring halfway through, until the carrots are tender when pierced with a fork and slightly caramelized.
Remove from the oven, sprinkle with fresh parsley, and serve immediately.
Notes
For extra caramelization, you can briefly place the carrots under the broiler for the last 1-2 minutes, watching closely to prevent burning.
If your carrots are very thick, cut them into smaller pieces so they cook evenly with the glaze.
