Ingredients
Scale
1 lb mixed mushrooms (cremini, shiitake), sliced
2 tablespoons olive oil
4 cloves garlic, minced
1/2 teaspoon red pepper flakes (adjust to your spice preference)
2 tablespoons fresh parsley, chopped
1 tablespoon lemon juice
Salt, to taste
Freshly ground black pepper, to taste
4 thick slices sourdough bread
2 tablespoons butter (for toasting)
Instructions
Wipe the mushrooms clean and slice them evenly.
Heat the olive oil in a large skillet over medium-high heat.
Add the mushrooms to the hot skillet; cook without stirring for 3-4 minutes to allow them to brown.
Stir the mushrooms and continue cooking until they release their moisture and start to brown again, about 5-7 minutes total.
Reduce the heat to medium. Add the minced garlic and red pepper flakes to the skillet. Cook for 1 minute until fragrant; do not let the garlic burn.
Remove the skillet from the heat. Stir in the fresh parsley and lemon juice. Season well with salt and pepper.
While the mushrooms cook, toast the sourdough slices until golden brown. You can use a toaster or pan-fry them in butter for extra richness.
Spoon the spicy garlic mushroom mixture generously over the toasted bread slices.
Serve immediately and enjoy your gourmet toast.
Notes
For a richer flavor, use brown butter when toasting the bread.
Noah suggests using a mix of mushrooms for textural variety.
If you prefer a milder spice, start with 1/4 teaspoon of red pepper flakes.
This mixture tastes great served over polenta or mixed into scrambled eggs.
