  • 1 1/2 cups granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup fresh strawberries, finely pureed
  • 1/2 cup fresh strawberries, finely diced
  • For Cream Cheese Frosting: 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the softened butter to the dry ingredients and mix on low speed until the mixture resembles coarse crumbs.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. In a separate bowl, mix the buttermilk and strawberry puree.
  6. Gradually add the buttermilk mixture to the batter, mixing until just combined. Do not overmix.
  7. Gently fold in the finely diced fresh strawberries.
  8. Divide the batter evenly between the prepared pans. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  10. To make the frosting, beat the cream cheese and butter together until smooth. Gradually add the powdered sugar, beating until light and fluffy. Mix in the vanilla and salt.
  11. Once the cakes are completely cool, frost and stack the layers. Decorate with additional fresh strawberries if desired.

Notes

  • For the most intense strawberry flavor, use fresh, ripe strawberries.
  • If you prefer a lighter frosting, substitute half of the cream cheese frosting with stabilized whipped cream.
  • To ensure a moist cake, do not overbake. Check for doneness at 30 minutes.
