Scale
1 pound breakfast sausage
1/4 cup all-purpose flour

1 can (10.2 ounces) refrigerated biscuits
1/2 cup shredded cheddar cheese (optional)

In a large skillet over medium heat, cook the breakfast sausage until browned. Drain off excess grease.
Sprinkle the flour over the cooked sausage and stir to combine. Cook for 1 minute.
Gradually whisk in the milk until the mixture is smooth.
Bring the gravy to a simmer, stirring constantly, until it thickens.
Stir in the salt and pepper.
Pour the sausage gravy into a 9×13 inch baking dish.
Arrange the refrigerated biscuits evenly over the gravy.
If using, sprinkle the cheddar cheese over the biscuits.
Bake for 15-20 minutes, or until the biscuits are golden brown and cooked through.
Notes
You can use any type of breakfast sausage you prefer.
For a spicier gravy, add a pinch of red pepper flakes.
If you don’t have refrigerated biscuits, you can make your own homemade biscuit dough.
