  • 1 (15-ounce) can black beans, rinsed and drained
  • 3 large eggs
  • 1/2 cup unsweetened applesauce
  • 1/2 cup unsweetened cocoa powder
  • 1/3 cup melted coconut oil
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
  2. In a food processor, combine the rinsed black beans, eggs, and unsweetened applesauce. Process until smooth.
  3. Add the unsweetened cocoa powder, melted coconut oil, granulated sugar, vanilla extract, baking powder, and salt to the food processor. Process again until well combined and smooth.
  4. If using, stir in the chocolate chips.
  5. Pour the batter into the prepared baking pan and spread evenly.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached.
  7. Let the brownies cool completely in the pan before cutting and serving.
