1 tablespoon olive oil
1 (15 ounce) can black beans, rinsed and drained
1/2 teaspoon cumin
1/4 teaspoon chili powder
Salt and pepper to taste
2 ripe plantains, peeled and sliced
1 tablespoon vegetable oil
8 small corn tortillas
1/4 cup chopped fresh cilantro
1/4 cup crumbled cotija cheese (optional)
Lime wedges for serving
Heat olive oil in a medium skillet over medium heat.
Add black beans, cumin, chili powder, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until heated through and slightly softened.
While beans are cooking, heat vegetable oil in a separate skillet over medium-high heat.
Add plantain slices and cook for 2-3 minutes per side, until golden brown and caramelized.
Warm the corn tortillas according to package directions.
Assemble the tacos by filling each tortilla with the black bean mixture and fried plantains.
Top with cilantro and cotija cheese, if desired.
Serve immediately with lime wedges.
Notes
Use ripe plantains that are mostly black for the sweetest flavor.
Adjust spices to your preference.
For a vegan option, omit the cotija cheese.
