2 cups water
1 ripe mango, diced
1/2 red onion, thinly sliced
1/4 cup fresh cilantro, chopped

3 tablespoons lime juice
2 tablespoons olive oil
1 teaspoon honey or maple syrup
1/2 teaspoon grated fresh ginger

Instructions
Cook the black rice: Combine rinsed black rice and water in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 30-35 minutes, or until rice is tender and water is absorbed. Let it cool.
Prepare the dressing: In a small bowl, whisk together lime juice, olive oil, honey or maple syrup, grated ginger, salt, and pepper.
Assemble the salad: In a large bowl, combine the cooled black rice, diced mango, sliced red onion, chopped cilantro, and chopped mint.
Add the dressing: Pour the dressing over the salad and toss gently to combine.
Serve: Garnish with chopped peanuts or cashews if desired. Serve immediately or chill for later.
