A creamy, vegan drink that combines the comforting taste of traditional horchata with the nutty, rich flavor of black sesame. This recipe offers a delightful Asian-inspired twist on a classic.

Ingredients

  • 1 cup uncooked white rice
  • 1/2 cup black sesame seeds
  • 4 cups water, plus more for soaking
  • 1 cinnamon stick
  • 1/4 cup granulated sugar, or to taste
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Soak the rice in water overnight or for at least 8 hours.
  2. Drain the soaked rice and rinse it well.
  3. In a blender, combine the drained rice, black sesame seeds, 4 cups of fresh water, and the cinnamon stick. Blend until smooth.
  4. Pour the mixture through a fine-mesh sieve or cheesecloth into a bowl, pressing to extract as much liquid as possible. Discard the solids.
  5. Stir in the sugar, vanilla extract, and salt. Adjust sweetness to your preference.
  6. Chill the horchata thoroughly before serving.
  7. Serve over ice.

Notes

  • For a smoother texture, you can blend the mixture a second time after straining.
  • If you don’t have a fine-mesh sieve, use cheesecloth for better straining.
  • Adjust sugar and vanilla to your personal taste.
