Follow these steps to make a simple, delicious blackberry cobbler with a sweet, bubbly filling and a tender topping.

  • 6 cups fresh or frozen blackberries
  • 1 cup granulated sugar (adjust for berry sweetness)
  • 1/4 cup all-purpose flour
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1 large egg, lightly beaten
  • 1 tablespoon coarse sugar for sprinkling (optional)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease an 8×8 inch baking dish.
  2. In a large bowl, gently combine the blackberries, 1 cup sugar, 1/4 cup flour, lemon juice, vanilla extract, and cinnamon. Mix until the berries are lightly coated.
  3. Pour the berry mixture into the prepared baking dish. Dot the top evenly with the cold butter pieces.
  4. In a separate medium bowl, whisk together the 1 1/2 cups flour, 1/2 cup sugar, baking powder, and salt for the topping.
  5. Cut in the cold butter pieces using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  6. In a small bowl, mix the milk and egg. Pour this liquid mixture into the dry ingredients and stir just until combined; do not overmix.
  7. Drop spoonfuls of the batter evenly over the top of the berry filling. It does not need to cover the berries completely.
  8. Sprinkle the coarse sugar over the topping, if using.
  9. Bake for 40 to 45 minutes, or until the topping is golden brown and the filling is thick and bubbling around the edges.
  10. Let the cobbler cool on a wire rack for at least 15 minutes before serving.

Notes

  • If you use frozen blackberries, do not thaw them first; use them straight from the freezer.
  • For a crispier topping, you can brush the batter lightly with a little extra milk before sprinkling with coarse sugar.
  • Serve warm with vanilla ice cream or fresh whipped cream.
