  • 1 cup (225g) Unsalted Butter, softened
  • 1 cup (200g) Granulated Sugar
  • 2 cups (240g) All-Purpose Flour
  • 1/2 teaspoon Salt
  • 1 cup (240g) Blackberry Jam

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Whisk together the flour and salt in a separate bowl. Gradually add the dry ingredients to the butter mixture, mixing until just combined and a crumbly dough forms.
  4. Press two-thirds (2/3) of the dough mixture evenly into the bottom of the prepared baking pan.
  5. Spread the blackberry jam evenly over the crust layer.
  6. Crumble the remaining one-third (1/3) of the dough over the jam layer.
  7. Bake for 30 to 35 minutes, or until the topping is golden brown.
  8. Let the bars cool completely in the pan on a wire rack before lifting them out using the parchment overhang.
  9. Cut into squares and serve.

Notes

  • For a crisper layer, chill the dough for 15 minutes before pressing it into the pan.
  • Use store-bought or homemade blackberry jam. Adjust sweetness based on your jam.
  • Cooling completely is key for clean slicing. Do not rush this step.
