A refreshing and floral lemonade bursting with the sweet-tart flavor of blackberries and the fragrant essence of lavender. This drink is perfect for a warm day, offering a delightful twist on a classic.

  • 1 cup fresh blackberries
  • 2 tablespoons dried culinary lavender buds
  • 1 cup granulated sugar
  • 1 cup water
  • 1 cup fresh lemon juice (about 4-6 lemons)
  • 4 cups cold water
  • Fresh mint sprigs for garnish (optional)
  • Fresh blackberries for garnish (optional)

Instructions

  1. In a small saucepan, combine 1 cup of water and the dried lavender buds. Bring to a simmer over medium heat. Remove from heat, cover, and let steep for 15 minutes.
  2. Strain the lavender-infused water through a fine-mesh sieve into a bowl, pressing gently on the buds to extract as much liquid as possible. Discard the lavender buds.
  3. In the same saucepan, combine the sugar and the steeped lavender water. Heat over medium heat, stirring, until the sugar is completely dissolved. Let this syrup cool.
  4. In a blender, combine the fresh blackberries and 1/2 cup of the lemon juice. Blend until smooth.
  5. Strain the blackberry puree through a fine-mesh sieve into a pitcher, pressing on the solids to extract as much juice as possible. Discard the seeds and pulp.
  6. Add the cooled lavender syrup and the remaining 1/2 cup of lemon juice to the blackberry juice in the pitcher. Stir well.
  7. Add 4 cups of cold water to the pitcher and stir to combine.
  8. Taste and adjust sweetness or tartness as needed by adding more sugar syrup or lemon juice.
  9. Serve the Blackberry Lavender Lemonade over ice. Garnish with fresh mint sprigs and extra blackberries if desired.

  • Ensure you use culinary-grade lavender buds.
  • Adjust the amount of lavender to your preference; start with less if you are new to lavender flavor.
