Ingredients
Scale
2 cups rolled oats
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 1/2 cups milk
1/2 cup maple syrup
2 large eggs
1/4 cup melted butter
1 teaspoon vanilla extract
1 cup fresh blackberries
Instructions
Preheat your oven to 375°F (190°C). Grease an 8×8 inch baking dish.
In a large bowl, whisk together the rolled oats, baking powder, cinnamon, and salt.
In a separate bowl, whisk together the milk, maple syrup, eggs, melted butter, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Gently fold in the fresh blackberries.
Pour the mixture into the prepared baking dish and spread evenly.
Bake for 30-35 minutes, or until the center is set and the top is golden brown.
Let it cool slightly before serving.
Notes
For a firmer texture, let the bake cool completely before slicing.
You can substitute frozen blackberries if fresh ones are unavailable, but do not thaw them before adding to the batter.
Add a sprinkle of chopped nuts like walnuts or pecans for extra crunch.
