1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup pastry cream or thick vanilla pudding (store-bought or homemade)
4 ounces semi-sweet chocolate, chopped
1/2 cup heavy cream
1 tablespoon unsalted butter
Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together the softened butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined to form a soft dough.
Roll the dough into 1-inch balls and place them 2 inches apart on the prepared baking sheets. Flatten each ball slightly with the bottom of a glass.
Bake for 10 to 12 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Prepare the chocolate ganache: Place the chopped chocolate in a heatproof bowl. Heat the heavy cream in a small saucepan until it just begins to simmer. Pour the hot cream over the chocolate and let it sit for 5 minutes. Stir until smooth, then stir in the 1 tablespoon of butter. Let the ganache cool slightly until it thickens to a spreadable consistency.
To assemble the bites, spread a generous teaspoon of pastry cream onto the flat side of one cooled cookie. Top with a second cookie to create a sandwich.
Dip the top half of each sandwich cookie into the slightly cooled chocolate ganache, or drizzle the ganache over the top. Allow the chocolate to set before serving.
Notes
For a thicker filling, chill the pastry cream for at least 30 minutes before assembling the cookies.
If you prefer a dipped cookie, make the cookies slightly larger and use a thick, chilled vanilla buttercream instead of pastry cream for better structural support.
Use high-quality chocolate for the best ganache flavor.
