1 pound broccoli florets
1 pound butternut squash, peeled and cubed
2 tablespoons butter
2 tablespoons all-purpose flour
1.5 cups milk
1 teaspoon salt
0.5 teaspoon black pepper
0.25 teaspoon nutmeg
2 cups shredded cheddar cheese
0.5 cup breadcrumbs
1 tablespoon melted butter
Instructions
Preheat your oven to 375°F (190°C).
Steam broccoli florets until tender-crisp, about 5-7 minutes. Drain and set aside.
Boil or steam cubed butternut squash until tender, about 10-15 minutes. Drain and mash lightly.
In a saucepan, melt 2 tablespoons of butter over medium heat. Whisk in the flour and cook for 1 minute.
Gradually whisk in the milk until smooth. Cook, stirring constantly, until the sauce thickens.
Stir in salt, pepper, and nutmeg.
Remove from heat and stir in 1.5 cups of the cheddar cheese until melted and smooth.
In a large bowl, combine the broccoli, mashed squash, and cheese sauce. Stir gently to coat everything.
Pour the mixture into a greased 9×13 inch baking dish.
In a small bowl, combine breadcrumbs with 1 tablespoon of melted butter. Sprinkle over the casserole.
Top with the remaining 0.5 cup of cheddar cheese.
Bake for 20-25 minutes, or until bubbly and lightly browned.
Let it rest for a few minutes before serving.
Notes
For a creamier sauce, use whole milk.
You can add other vegetables like carrots or peas.
Feel free to add a pinch of cayenne pepper for a little heat.
