A simple recipe for making sweet and salty bacon with a sticky brown sugar glaze, baked until perfectly crisp.

  • 1 pound thick-cut bacon
  • 1/4 cup packed brown sugar
  • 1 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional, for heat)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with aluminum foil for easy cleanup, and place a wire rack on top of the foil.
  2. In a small bowl, mix the brown sugar, black pepper, and cayenne pepper, if using.
  3. Lay the bacon strips in a single layer on the wire rack. Do not overlap the strips.
  4. Sprinkle the brown sugar mixture evenly over the top side of the bacon strips. Press the sugar lightly onto the bacon so it adheres.
  5. Bake for 15 to 20 minutes. The exact time depends on your oven and desired crispness.
  6. Carefully remove the baking sheet from the oven. Using tongs, flip each bacon strip over. The glaze on the bottom side will be melted.
  7. Sprinkle the remaining brown sugar mixture over the second side of the bacon.
  8. Return the bacon to the oven and bake for another 5 to 10 minutes, watching closely to prevent burning. The glaze should be bubbling and caramelized.
  9. Remove the bacon from the oven. Let it cool on the rack for 5 minutes before transferring it to a plate lined with paper towels to drain excess grease. The glaze will firm up as it cools.

Notes

  • For extra crispiness, use thin-cut bacon, but reduce the cooking time by 3-5 minutes per side.
  • If the glaze starts to look too dark before the bacon is fully cooked, reduce the oven temperature to 375 degrees Fahrenheit.
  • You can substitute maple syrup for 1 tablespoon of the brown sugar for a maple-brown sugar flavor.
