1 pound carrots, peeled and sliced diagonally
2 tablespoons butter
1/4 cup packed brown sugar
1/4 cup water
1/2 teaspoon salt
Pinch of black pepper
Instructions
Combine the carrots, butter, brown sugar, water, and salt in a large skillet.
Bring the mixture to a simmer over medium heat.
Cover the skillet and cook for 10 to 12 minutes, or until the carrots are tender-crisp.
Uncover the skillet. Increase the heat to medium-high.
Cook, stirring often, for 3 to 5 minutes until the liquid reduces and coats the carrots in a thick glaze.
Remove from heat. Stir in black pepper.
Serve immediately.
Notes
For a vibrant color, use a mix of rainbow carrots if available.
Do not overcook the carrots; they should still have a slight bite.
Taste the glaze before serving and add a tiny pinch more salt if needed to balance the sweetness.
