  • 1 tablespoon unsalted butter
  • 2 cups fresh peaches, sliced
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 4 (8-inch) flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • Optional: Whipped cream or ice cream for serving

Instructions

  1. Melt butter in a skillet over medium heat.
  2. Add peaches, brown sugar, cinnamon, and nutmeg. Cook, stirring occasionally, until peaches are softened and the sauce has thickened, about 5-7 minutes.
  3. Remove peaches from skillet and set aside.
  4. Wipe the skillet clean.
  5. Place one tortilla in the skillet. Sprinkle half of the cheddar cheese and half of the Monterey Jack cheese over one half of the tortilla.
  6. Spoon half of the peach mixture over the cheese.
  7. Fold the other half of the tortilla over the filling.
  8. Cook for 2-3 minutes per side, until golden brown and the cheese is melted.
  9. Repeat with the remaining tortillas, cheeses, and peach mixture.
  10. Cut into wedges and serve warm.

Notes

  • You can use frozen peaches if fresh ones are not available. Thaw them completely before cooking.
  • Adjust the amount of cinnamon and nutmeg to your preference.
  • Serve with a dollop of whipped cream or a scoop of ice cream for an extra treat.
